It’s maple syrup season again. From February to April, when the nighttime temperature is -5 and the daytime temperature is +8 the sap runs. The maple sugar bush at Stanley’s Olde Maple Lane Farm near Metcalfe is up and running. Because of Covid, everything but their restaurant is open. At Grampie’s Sugar Shack just outside of Chesterville, the work of collecting the sap to turn it into sweet maple syrup has begun.
